Nougat is a delightful, chewy confection that blends sweetness with the crunch of nuts and the fruity burst of glazed cherries. This recipe creates a light and airy texture by carefully combining whipped egg whites with a hot sugar syrup, ensuring a smooth and delicate base.

The slow addition of the second batch of syrup enriches the nougat’s firmness while keeping it soft and melt-in-your-mouth delicious. Vanilla essence adds depth to the flavor, while the mix-ins of nuts and cherries offer wonderful contrast. After setting for a day or two, the nougat is ready to be sliced into elegant squares—perfect for gifting, snacking, or enjoying alongside a warm cup of tea. Classic and indulgent, this homemade nougat is sure to satisfy any sweet tooth!

Method:

  1. Prepare the first syrup:
    • Cook half of the sugar, half of the golden syrup, and half of the water together until it forms a hard ball when tested in cold water (118°C to 120°C / 244°F to 248°F at sea level).
  2. Beat the egg whites:
    • Whip them stiff but not dry, then slowly pour the hot syrup in while continuously beating.
  3. Prepare the second syrup:
    • While beating the egg mixture, cook the remaining half of the sugar, golden syrup, and water until it reaches the same hard ball stage.
  4. Combine:
    • Remove the second syrup from the heat and slowly add it to the egg mixture while continuously beating.
  5. Add flavor & texture:
    • Stir in vanilla essence, nuts, and cherries.
    • Pour the mixture into a shallow, buttered pan and smooth the surface with a knife.
    • Allow to set for 1 to 2 days.
  6. Cut & wrap:
    • Slice into squares and wrap in wax paper.
    • For a classic touch, line the pan with rice paper and press an additional sheet on top before cutting.
