This Chicken Bobotie is a delicious twist on a South African classic, combining tender, spiced chicken with fragrant yellow rice and a creamy baked topping. The dish is infused with a blend of warm spices like turmeric, curry powder, and cumin, complemented by the sweetness of raisins and chutney. The rich egg-and-milk topping gives it a comforting texture, sealing in the vibrant flavors. With its balance of savory and sweet, Chicken Bobotie is a hearty, flavorful meal perfect for family gatherings or cozy dinners. Serve it warm with a side of chutney for an authentic touch!

Method:

  1. Preheat the oven to 180°C (356°F) and spray an ovenproof dish with non-stick spray.
  2. Prepare the Yellow Rice: In a saucepan, cook all the rice topping ingredients until the rice is tender. Drain and set aside.
  3. Prepare the Chicken: Cut the chicken into pieces, rinse well, and place in a large saucepan with chicken stock and black pepper. Cook until tender, then debone and cut into bite-sized pieces.
  4. Cook the Aromatics: Sauté the onion and garlic in oil until soft. Stir in curry powder, turmeric, coriander, cumin, and chicken spice, frying for about 1 minute.
  5. Combine the Mixture: Add the cooked chicken, chutney, lemon juice, and seasonings, mixing well until heated through. Stir in the yellow rice and transfer to the prepared dish.
  6. Prepare the Topping: Beat the milk and eggs together and pour over the chicken mixture. Pierce a few holes with a fork to allow the milk mixture to seep in.
  7. Bake: Bake for 20–30 minutes or until the egg topping is set.
