Biltong Potjie is a rich, indulgent dish that celebrates bold flavors and comforting textures. The smoky bacon and earthy mushrooms blend beautifully with the creamy beef stock, while the tender biltong infuses each layer with deep, meaty richness. With its layers of fragrant rice, melted cheddar, and aromatic thyme, this dish is both hearty and satisfying—perfect for slow cooking over the coals to allow the flavors to fully develop.

For the best results, let the potjie rest after cooking to enhance the flavor depth, and gently mix it before serving to combine all the delicious layers. Want to take it even further? A sprinkle of crispy onion bits or a dash of cracked black pepper could add an extra dimension! 🍲🔥🥩✨

Method:

  1. Preheat & Sauté:
    • Preheat your potjie over the coals.
    • Melt the butter in the bottom of the potjie.
    • Add the chopped onions and bacon, frying until crispy and the onions are soft and translucent.
  2. Add Garlic & Mushrooms:
    • Stir in the garlic and mushrooms, cooking until the liquid evaporates and they start to turn golden brown.
  3. Build the Layers:
    • Pour in the beef stock, fresh cream, and thyme.
    • Layer the potjie by starting with rice, followed by biltong, and repeat until all ingredients are used.
  4. Cheese & Simmer:
    • Sprinkle half of the grated cheese on top.
    • Cover with the lid and let it stand over low-heat coals for 5-10 minutes.
    • Watch carefully to prevent the rice from burning.
  5. Rest & Final Touches:
    • Remove the potjie from heat and let it stand for about 30 minutes to allow the flavors to develop.
    • Gently stir, mixing all the layers together.
    • Sprinkle the remaining cheese over the top before serving.
